Tosa tea—tea produced in Kochi—has a rich aroma and a complex flavor with minimal bitterness. Tosa tea is ideal for flavoring sweets and giving a smoky depth to cocktails. Tea is generally grown in the rocky, mineral-rich soil of Kochi's mountains. Due to the topography, much of the crop is harvested with a portable, two-person tea-picking machine.
