One of the best ways to enjoy Kochi's high-quality vegetables is in one of its signature dishes, inaka sushi. This dish, which means "countryside sushi," replaces seafood with seasonal vegetables and edible wild plants. Common ingredients include myoga (Japanese ginger), taro stalks (Colocasia gigantea or ryukyu), bamboo shoots, and shiitake mushrooms. Kochi chefs add yuzu vinegar to the rice, for a refreshing finish.
