The vibrant purple, yellow, red, or orange shells of chotaro scallops, or noble scallops, are ideal for display. Their rich, sweet flavor and succulent texture can be enjoyed raw as sashimi or grilled, and they look attractive when served on their colorful shells. Chotaro scallops are farmed in the warm waters around Kochi and are shipped throughout the year.
